Vietnamese Coffee Ice Cream Sandwiches

It all started when…

Andy Satinsky of Weckerly’s reached out to us back in January 2019. Andy discovered our small roastery through a mutual friend and absolutely talented food and beverage photographer Ted Nghiem. Andy and his wife/Pastry Chef Jen were on a mission to create a Vietnamese Coffee ice cream - the right way, and the right way meant to first understand the craft and tradition of it and then to use actual Vietnamese coffee beans as the coffee base. In addition, they wanted to use their traditional layering system of their ice cream sandwiches to replicate the layers of a traditionally brewed cup of Vietnamese Coffee. Think - deconstructed cup of Vietnamese Coffee!

A traditionally brewed cup of Vietnamese Coffee or cà phê sữa has multiple steps - all important to yield a notable strong, chocolety and lingering taste of coffee on your palate. The coffee is brewed in a phin, a Vietnamese filter. A heavy hand of condensed milk is poured into a glass cup, and the phin is placed on top. Boiling hot water is poured over the phin and then the coffee slowly starts dripping over the condensed milk. If brewed correctly, the coffee that drops should almost look like malt - super thick and dark. This whole brewing process tastes about 4-5 minutes. Once complete, stir the coffee and condensed milk and drink hot or iced.

Andy, Jen and their entire production team did it right. And we couldn’t be more grateful for their efforts to create a delicious treat using our coffee.

Jeanne Chang of Lil’ Pop Shop met Thu of Càphê Roasters through their Joy Box collaboration! Jeanne makes small batch artisan cream and fruit bars, as well as handmade pies, using always fresh, local ingredients. Like the Weckerly’s team, Jeanne wanted to use actual Vietnamese coffee beans as the base for her Vietnamese Iced Coffee Popsicles.

And let me tell you, loud and clear, they are so satisfying and are perfectly made. It is made with the perfect amount of milkiness and sweetness, and the distinct flavor notes of the coffee resonates in every bite.
